The food for the game game is all about making sure your cooking something that doesn't need to be prepared on call. You gotta make sure you are making stuff that can be made ahead so you aint sitting in the kitchen or at the grill when the games going on wondering what everyone is cheering about. Coney Dog's

All across America you'll find Coney dog stands serving up hot dogs with coney sauce which is a chili like topping said to be created by a Greek guy in Detroit back in the day. Eventually the love for this style of dog spread out of Michigan and throughout the country. Everybody that loves coney dogs has a secret sauce recipe or a place thy go to that claims the same. Well in my research I found that in Flint, MI they use ground beef hearts and kidneys in the blend to give that regions coney's their unique flavor. I also read somewhere that you have to use shredded up cheap hot dogs when making the sauce. So one day I tried an impromptu recipe and was damn pleased with the results.

-1/2 cup of chili powder
-1/4 cup cumin
-1/4 cup smoked paprika
-1/4 cup garlic powder
-4 Oscar Meyer hot dogs blended up like in the pic above
-2 to 3 pounds ground beef
-2 lg. onions sliced very fine or put thru a grater
-1 tablespoon vinegar
-1 eight ounce can tomato paste
- 1 tablespoon worcestershire sauce
-1 tablespoon Yellow mustard
-1/2 cup of chicken stock


Coney sauce should be near dry and not too soupy

Ready for da smoker

One of the easiest and tastiest treats out there. Simply take a bunch of jalapenos and slice off the top part and remove the insides. Take your favorite BBQ rub and mix a tablespoon or two into some cream cheese and then stuff it in the jalapeno. Wrap the pepper in bacon and sprinkle some rub on it and smoke them in a smoker until the bacon is crisp.

'Sconnie Sliders
-a chibbqking tribute to WI & it's food

This years recipes all have a common bond and that's that they are all pretty simple to make. A Sconnie slider is simply Wisconsin beef summer sausage sliced into coins and grilled on both sides for a few minutes per. You then take them and toss the chips in your favorite BBQ sauce and serve them on warm dinner rolls. Simple and succulent. I like the combo of the charred beef chips and Open Pit BBQ sauce.


What you'll need along with some dinner rolls and BBQ sauce


Step 1) Grill


Step 2) Toss in BBQ sauce


Step 3) Place beef chips in warm rolls and eat

I came up with this one when I had all the ingredients needed to make them and the idea just came to mind. To keep this recipe real simple, just buy a rotisserie chicken from your local grocer and remove the skin and shred the meat off and reserve it for the sandwiches.

Ingredients (serves 6-8)

- 1 rotisserie chicken, shredded apart into pieces
- 1 bottle of Franks buffalo sauce
- 1 jar of Bleau cheese dressing
- 1 stick of butter
- stalk of celery, chopped into small pieces
- 1 package dinner rolls (as many rolls as sandwiches wanted)

Mix butter and buffalo sauce and simmer until heated thru

-Chix Tenders wrapped in bacon

Need I explain any further?

Ingredients

-package of raw chicken tenders
-package of bacon
-your favorite BBQ rub and some brown sugar
-Ranch dressing

1) Remove tenders from package and rinse under water and pat dry. Sprinkle your favorite rub over the tenders then wrap it fully in bacon (like that seen in the pic below) insert a toothpick to keep it wrapped and then sprinkle the bacon with brown sugar.

2) Grill wings until the bacon is crisp on the outside but be careful to watch for flareups. Serve with ranch dressing.

3) Enjoy!

KingT's Garlic BBQ Beer Wings


What you'll need for G-B-BBQ wings (plus wings and BBQ sauce)

Note: Old Bay, Chicken Rub or any other rub you like will work.

1) Take everything seen above and marinate wings for at least 24 hours.

Note: there is no exact recipe, just use 3 tablespoons of each the rub and chopped garlic and the entire bottle of your beer of choice.

2) Drain the garlic-beer liquid and pat wings dry. Grill wings until done. Take them off grill and toss in your favorite BBQ sauce (make sure sauce is at room temp or warm).

3) Enjoy!

Grilled Italian Sausage Mostacholi with roasted peppers
-a chibbqking original recipe

Ingredients

2 pound's Italian sausage (grilled)
2 green bell peppers (roasted on grill and peeled)
1 large onion, chopped
6-8 cups spaghetti sauce (you can doctor up bottled stuff if you like)
1 – 16 ounce package mostacholi
4 cups mozzarella cheese, shredded
1/2 cup Parmesan cheese, grated

Directions

1) Cook the sausage on the grill, while sausage is grilling roast your green peppers. Once done take sausage off and set aside and place your pepper sin a brown paper bag and wrap it up so no air gets out.

2) If using homemade red sauce, simply take the chopped onion and saute it and then dump your sauce in the pot and let it simmer. If using bottled or jarred sauce then I would doctor it up with sauteed onions, garlic and peppers etc...

3) Cook the pasta according to the packages instructions. While pasta is cooking slice the sausage into single pieces. When finished rip off the skin of the roasted peppers and remove the insides and dice them up into pieces.

4) Put small amount of sauce into the bottom of pan and spread it around. Layer some of the pasta over the sauce and add half of the sliced sausage and chopped peppers and add 2 cups of the mozzarella cheese and 2 cups of sauce. Repeat the layer once more and top with Parmesan cheese.

5) Bake in the oven for 15-20 minutes.

Super Steak Kebabs

One of my favorite things to grill are steak kabob's. If you get the right pieces of meat for them and have a good marinade and can let them sit in it for 24+ hours they always taste great. Here is a marinade I came up with when I was experimenting with them a couple months back. I might have to make these at my party this year.

Super Steak Marinade

-1 cup vegetable oil
-1/3 cup light soy sauce
-1/3 cup Worcestershire sauce
-1/3 cup red wine vinegar
- the juice from a lemon
- one small chopped onion
- 3 tablespoons of garlic
- 1 tablespoon of Greek Oregano
- salt and pepper

Combine the ingredients and marinate meat for at least 24 hours. Grill with peppers and onions on skewers over live charcoal.

You know many people out there are throwing New Orleans/Cajun themed super bowl parties this year. Here is an easy recipe for a blackened chicken alfredo. Easy to make and easy to make alot of. Go Saints. Recipes for this dish easy and crowd pleasing are all over the 'net. I like to use bowtie pasta in mine.

You might remember these from a previous post. Irish-Mexican nachos is an ultimate gameday grub dish and sure to be a crowd pleaser. KingT's Tex-Mex Chili (The Champ is Here)

If you went to the Time Out Chicago chili cookoff this year, you didn't see me there. No worries though because I am still tweaking what will become my signature recipe and you might even catch me down south in Murphysboro, IL at the 17th street bar and grill's annual chili cookoff at the end of February.

I'm tweaking a little bit here and there and figuring out the perfect portion amounts but I am confident you will enjoy my "sharing" recipe, which is about as much as I'll share of it. This isn't a recipe for a small group of people or someone looking for a quick batch of chili, you need to make it in a big pot due to the amount of ingredients added in and its a two day process. You will be rewarded should you have at it.

Since the chili recipe above calls for alot to be made, you gotta have some stuff to do up with the leftovers. If you like chili cheese dogs, this chili makes a mean one. Here are a couple more ideas you can use the chili for. You can take some fries, fresh or frozen, and top them with the chili and shredded cheddar and add chopped onions on top for some fine chili cheese fries.

White Trash Tacos

Everyone knows how to make white trash tacos. Just follow the instructions on the taco seasoning mix and plop the ground beef on a tortilla and top with your favorite toppings. I like to get real trashy and use onions rings as a topping on mine.

Sunday Neckbone Gravy (Makes 16 Cups)

If you want to go all out this Super Sunday then you need to do it like all Italian families do every Sunday. Sunday red gravy is a tradition in many families and it starts first thing in the morning. I once read a recipe from Esquire that was truly super and decided to try it immediately. Over time I played around with it and then settled on this recipe for a great batch of marinara that wont cost you more than $20 to make.


Simmered neckbones out of the pot

Ingredients for Sauce

About ½ cup olive oil
6-8 pounds pork neckbones
4 lbs your favorite meatballs
2 medium Spanish onions, finely chopped
8 garlic cloves, minced
1 12-oz can tomato paste
2 2 oz containers of anchovies (mashed in oil)
5 28-oz cans whole peeled tomatoes (preferably San Marzano) with juices, crushed by hand until no whole tomatoes remain
3 bay leaves
Hefty pinch sugar
Salt to taste (about 2 to 3 tsp)

Ingredients for Meatballs

4 lbs meatloaf mixture (beef, pork, veal)
12 slices white bread, broken into small 1/2 inch pieces (or you can use rolls or any stale bread you have and want to use up)
4 eggs, slightly beaten
garlic powder to taste
Italian seasoning to taste
parsley flakes to taste
1/2 cup grated Parmesan cheese
salt & pepper
olive oil or vegetable oil (for frying)

Instructions for Meatballs

~Mix all ingredients gently in a large bowl until well combined.

~Roll meatballs 1 1/2- 1 3/4" in diameter.

~Heat about 1/4" of oil over medium heat in a large frying pan.

~Fry meatballs in oil, rolling frequently, until evenly browned and juices run clear.

~Set meatballs aside to drop in sauce after its made.

Instructions for Sauce

~Coat cooking surface of large heavy-bottomed stockpot (at least 12 qts — we're talking about a huge pot) with olive oil, place over medium-low heat, and working a few at a time brown the neckbones on all sides and leave them in the pot. (Add more olive oil as needed.)

~Add onions to pork bones and slowly brown, stirring occasionally, about 3 to 5 minutes. Add garlic and lightly brown, stirring occasionally, 3 to 5 minutes. Add mashed anchovies and stir occasionally.

~Add tomato paste and stir to coat onions, anchovies and pork bones. Slowly cook until paste begins to thicken and turn deep reddish brown, about 5 minutes. Add tomatoes, bay leaves, and sugar. Stir well, making sure you get down to the bottom, and bring to a low boil.

~Lower heat and simmer uncovered until sauce begins to thicken. After three hours, add meatballs. Continue to simmer until a layer of oil forms on top, about another hour. Season to taste with salt.

~Use a slotted spoon to transfer meat to serving platter. Shred off the meat of the neckbones and discard the bones. Remove the meat back to the pot. Use sauce in your favorite pasta.

--Tailgatin' and how to make mofos start playa hatin' (Recipes)

You might remember last year's post that included some wing recipes along with a '08-'09 Bull's season preview. Well the preview was more like a look forward to what Derrick Rose could be. So you can catch my upcoming season preview at the end of the article. Now on to the wings! I'm always looking for great wing recipes and I have a few more to share with you here today. Before I get to those though let me show you how I usually prepare my wings pre-sauce. I always use a standard rub for wings to add an extra coat of flavor before they tossed in buffalo sauce or whatever happens to be the flavor of the day.

The video I took below with my camera is how they should look before they come off of the grill. You cant time them you just kind of know when they're ready. It takes some practice like anything else. As long as that grill is snappling, crackling and popping like it is in the video you should be good to go after 20 minutes or a little after. I still haven't found anything near as good to the chicken drumettes offered at Whole Foods. They make GREAT wings.

Chicken Kings Rub

1 TBLS kosher salt
1 TBLS granulated garlic
1 TSP onion powder
1 TSP fresh black pepper
1 TSP cayenne

Kings Chicken Club Wings

So the first wing recipe I'm going to throw at you is a chibbqking original. I came up with this idea when I was thinking of a way to make wings that I hadn't tried before. An in the works BLT dippin sauce from Wiener & Still Champion gave me this idea. Chicken Club wings which is my wings rubbed with my standard recipe above and then grilled. I took some mayo and blended it with a few baby tomato's and tossed the sauce with fried bacon bits and chopped lettuce.

Recipe

Chicken Wings rubbed with standard rub recipe (see above)
mayo with some old bay seasoning mixed in (2 TSP is good)
baby tomatoes or half of a Roma chopped
4-8 pieces of fried bacon, chopped to bits
chopped lettuce

~Grill the wings until done

~10 minutes before taking the wings off blend the mayo and tomatoes and throw some bacon and lettuce on top and mix it up a little.

~Serve the wings with sauce on the side to use for dipping.

Josh Bousel's Grilled Buffalo Wings

Next up is one of the best wing recipes I have found on the net. I got this from Serious Eat's and made it a few times this summer and have plans for them this weekend. Yes Buffalo wings are usually fried and in a sense they need to be. That's what I thought anyways. I love wings fried but I also love them grilled but I would say I prefer them grilled. One of the reasons for that is this recipe right here. When you char up some perfect looking wings and toss them with this super delicious sauce you get some of the best wings you can make.

Grilled Buffalo Wings
-Sauce recipe adapted from Cooks Illustrated
-Recipe from Serious Eats


Ingredients

3 pounds chicken wings (18 wings), cut up
1 teaspoon cayenne pepper
1 teaspoon ground black pepper
1 teaspoon kosher salt
For the Sauce

4 tablespoons unsalted butter
1/2 cup hot sauce, preferably Frank's Louisiana Hot Sauce
2 tablespoons Tabasco sauce or other hot sauce
1 tablespoon dark brown sugar
1 tablespoon honey
2 teaspoons cider vinegar
1/4 teaspoon cayenne pepper, plus more to taste
Procedure

1. Mix together the cayenne, black pepper, and salt in a small bowl. Sprinkle the mixture all over the chicken wings. Place the wing in the refrigerator until ready to use. (This can be done the night before.)

2. Melt butter in small saucepan over low heat. Whisk in the rest of the sauce ingredients until combined. Remove from heat and set aside.

3. Light a chimney 3/4 full of charcoal. When charcoal is fully lit and covered in gray ash, pour coals out and arrange them on one side of the charcoal grate, keeping the other side empty. Place the wings over the cool side of the grill, cover, and cook until skins are lightly browned, about 8 minutes. Move the wings to the hot side of the grill and continue to cook until the skins have crisped, about 2-3 minutes. Remove the wings to a bowl. Pour the sauce over the wings and toss to coat evenly. Remove wings to a plate and serve hot.

Baxter Road Grilled Chicken Wings

If your a BBQ junkie and you don't own the Barbecue Bible go get a copy. I've had one since it came out and I still love going to it for a recipe a few times a year. The author, Steven Raichlen, has traveled the globe eating BBQ and the recipes and info from this book, which he put together from those travels, is excellent. I'm eventually going to try all the recipe and I finally got to one that I had wanted to try since I first got the book. I'm always interested in regional eats and that includes all the countries. I especially love the Caribbean and I want to get to Barbados one day, especially after reading Mr. Raichlen's description. For now I had to settle for this recipe which is a take on the chicken served along Baxter Road to the party people of the island. It's served into the wee hours of the morning and is a Barbados staple. Click HERE for the excerpt from the Barbecue Bible. I might make it over there this winter. I used wings instead of whole chickens.

chicken wings
clove garlic, peeled
shallots, peeled
bunch chives or scallions, trimmed
green bell pepper, medium, stemmed, seeded and coarsely chopped
rib celery, medium, coarsely chopped
scotch bonnet chile or 2 jalapeno chiles, seeded and minced (for a milder marinade, seed the chiles)
tbs parsley, fresh Italian, (flat-leaf)
tsp thyme, chopped fresh, or 1 teaspoon dried
tbs lime juice, fresh, or to taste
tbs soy sauce
tbs olive oil
Salt and freshly ground black pepper, to taste

1. Rinse the chicken pieces under cold running water, then drain and blot dry with paper towels. Place in a large nonreactive bowl or baking dish and set aside while you prepare the marinade.

2. Combine the garlic, shallots, chives, bell pepper, celery, chile, parsley, and thyme in a food processor and process to a smooth paste. Add 2 tablespoons lime juice, the soy sauce, and oil and process until blended and smooth. Taste for seasoning and add salt, pepper, and lime juice as needed; the mixture should be highly seasoned. Pour the mixture over the chicken in the bowl and turn the pieces to coat. Cover and let marinate, in the refrigerator, for 4 to 12 hours (the longer the better).

3. Preheat the grill, using the two-tiered method.

4. When ready to cook, oil the grill grate. Remove the chicken pieces from the bowl, reserving any marinade that has drained off. Arrange the pieces, skin side down, on the grate over the hotter section of the grill and cook. Brush the pieces once or twice with the reserved marinade, but not during the last 5 minutes.

5. Transfer the chicken pieces to serving plates or a platter and serve.

Last but by no means least are the best wings I had on the BarB this year. You can have them at home too. The only problem is your going to have to vacation in Negril and grab some jerk sauce from Bourbon Beach. I still have half a bottle left and these wings I marinated in them overnight were simply divine.

The second year is the most telling year of a future NBA star. Almost all the stars stepped their game up a next level after being in the league for a full year. I think we saw the potential I expected and I still stand by him being one of the games next big things. An Eastern Conference All Star Starter (because he deserves to be not b/c the fans like him) and eventually an all out winner and possible leader of a Championship team. I think this years team is good enough for 5th or 6th seed in the East and may as good as fourth. They could win a series or two. I know we lost Gordon but Salmons is a player who's average has gone up every year in the league and I like him to keep that up this year. Whether or not Vinny's can grow as a coach is TBD. I do like the fact we are preaching D and the team is responding. I expect the Bulls to be much better on D which was our weakest problem last year.

With the second year emergence of Rose tagged along with a rising legitimate player in Noah teamed up with Salmons and Miller (acq. at last years trade deadline) I think the loss of Gordon will help on D and hurt a little on offense. However I think it helps more on D than it hurts the O. I'm not sure about the Rook's, while I don't not like them I don't love them, but hey that's cause there rookies and a DRose only comes around once a decade. I expect Rose to step it up and take it to the hole very often and Salmons to find a home and others to contribute like Noah. I could easily see him averaging a double double this year and I am most impressed with his play this preseason. No one has made bigger strides than he has from the Celtics series up to now. I still think we need a experienced or an up and rising young coach who has served his time. Oh and a Boozer, Bosh or whoever comes on the block or hits FA next summer will really help too.

I do expect a playoff series win this year and Rose to become one of the games best. I'm predicting 41 wins. We always have a brutal schedule to start the year due to the circus trip but this year is as hard as ever. Get out and get to a game. You'll be able to tell your kids you watched a legend grow. Is it safe to say I get around?

I'm sure you've been over to Serious Eats. The NYC based food site is one of the best in the biz at gathering information from the food world and spreading it over the 'net for everyone to enjoy. One of my favorite pieces they do is the "Hot dog of the Week" which are drawings of different regional favorites from the Hot dog world. There is a different hot dog sketch featured each week done by a dope food artist named Hawk Krall. Instead of doing the tourist's version of a Chicago style dog, my man Hawk did it right and decided to feature the Depression Dog or the "minimalist" as its known by many of its supporters. Its about time the real Chicago Style Hot Dog got its due diligence and a big up to Hawk for doing it right. Among the other regional dog's featured on there already have been-The West Virginia Slaw Dog, Hawaiian Puka Dogs, Philly's version of a Combo and a few others. Not only did Hawk sketch up a great portrait of the Chicago dog but he did a good job in explaining the history and why its the Depression dog that is real Chicago. Vienna Beef natural casing hot dogs are smaller all beef tubes that have mad snap to them. These are the world's best hot dog's and they are available at the Vienna beef factory store on Damen ave. as well as their 5/lb NC polish. I don't know of anywhere else that sells them except the places that serve them. Once you have all the ingredients together it's too easy.

~Just place the dog in near boiling water and let it sit for a bit.

~Steam the bun's over some boiling water or just nuke them and dress the dog the same way its done by the real Chicagoans. Of course they aren't quite the same without the fries loaded on top...but still damn good.

Well folks I already gave you quite a few signature sandwiches that may tell you why your fat. Just this past July it was the McJeff making way for your summer grilling time get downs. What I am about to spill to you is a little trick of the trade-with full permission from those that need to give it-I gave myself permission. So I now introduce to you "The Big Fatty Capo di tutti capi Sammy" aka "The Johnny Whopper Carmineputo Jr" and all I can say is this might be one sandwich you don't wanna fuck with. Got it? Good. Your heart just might get whacked and you may disappear into the lake or something like that. I came up with this when I had quite a few leftovers from a meeting we held on Global Warming...or something like that. Italian Sausage Patty's
Different Italian sliced deli meats
shredded provolone cheese
sauteed sweet peppers
Banana peppers
hot giardineria

Please Note: Directions below are for a one portion sandwich but you can easily make this for a group of people at any tailgate, BBQ or grilling event.


Directions

~Take your standard recipe for garlic bread and make it and bake it. I use River Valley Ranch five cheese garlic spread. Its available at the farmers market in Lincoln Park and many Sam's liquor locations in the area. Click here for their website.


Italian Sausage Patty

~Take some Italian Sausage and remove the meat from the casing and form it into a patty. Some and most places in Chicago serve ground Italian sausage already removed from the casing which is also acceptable.

Tip: Place the patty's in the freezer for 45 minutes before grilling so that they stay in form when on the grill. You need to make sure they are well packed so they don't fall apart during cooking.

Mortadella, Capricolla, with two types of salami


~Grab some sliced Italian deli meats like capricolla, mortadella and a couple types of salami. When the patty's are close to done on the grill begin to saute a few pieces of each of the meats in a buttered pan until the edges are crispy and set aside.

~Layer your deli meats on the bottom portion of the bread and place the patty on top and top the patty with shredded provolone cheese and place the top half of the bread on top and wrap it in aluminum foil and put it back on the grill for 30-60 seconds until cheese melts.

~Garnish your sandwich with the sweet peppers, banana peppers and giardinera and slice it half and be ready to eat half of it at halftime and the other half when the game is over. The nice thing about this sandwich is even if your squad loses you wont when you try it-definitely not any weight anyways.

Simple Steak

--Tailgatin' and how to make mofos start playa hatin' (Recipes)

Sometimes you don't got all day to do prep work and chop and cook etc... Sometimes you just need a quick meal so you can watch the game and fill up your stomach with some food before you do the booze. What's about as American as tailgating and football and also goes well with both? beef baby-steak to be precise. So with that I give you my favorite ways of preparing a simple steak that still tastes like it took more than 15 minutes to prepare.

~Just take a piece of steak and marinate it in fajita, adobo or any Latin-American like seasoning around the house. Grill the steak to desired doneness and top with avocado slices sprinkled with chili powder and serve with sauteed peppers and tortillas.

Teriyaki Steak

Directions


~Take a piece of steak and marinate in a teriyaki glaze such as Kikkomans for 15 minutes. When ready grill it to desired doneness while glazing the marinade over the steak one more time during cooking. Top the steak with toasted sesame seeds and slice and serve over white rice.

Steak & Egg's w/ Potatoes

Directions

~Chop up a potato or two and cook in well oiled skillet and add spices and chopped green peppers and onions. Season your steak with what suits you and grill your steak to desired doneness and top with a fried egg and serve with potato's.
